Before I lose you here, please note that 1. I am not a huge tomato fan and 2. I pretty much despise onions. But SOMEHOW I can’t stop eating on this delicious, fresh cucumber, tomato, and onion salad.

There are tons of recipes out there for similar salads, I’ve taken tips from this one and that one and come up with my own super simple salad. It’s perfect for a carry-in (do you say carry-in or pot luck?) or to make on Sunday and use as a side all week.

Ingredients:
1 large cucumber
1/2 of a small/medium red onion (more if desired)
3-4 fresh tomatoes
1/4 cup olive or avocado oil
1/2 cup white wine or apple cider vinegar
2 tbsp fresh dill (pro tip- fresh from an herb garden makes a HUGE difference)
1/2 tbsp white sugar (optional)
Salt and pepper to taste

Directions:
Slice cucumber and tomatoes in thin rings. Slice onion into thin rings then a large chop. Blend vegetables. Mix oil, vinegar, dill, and sugar until emulsified. Pour over veggies. You will likely not require the entire dressing, but it’s difficult to make right in smaller proportions in my experience. It’s best to chill and marinate at least 1-2 hours before serving.
